Mashed Potatoes


6 medium potatoes, scrubbed and peeled
1 1/2 tablespoons butter or margarine
1/3 cup fat-free milk
salt and pepper to taste


  1. Peel potatoes.
  2. Cut potatoes into quarters and cook in boiling water until tender. Drain water from potatoes.
  3. Mash potatoes with a potato masher or put potatoes in a mixing bowl and beat with an electric mixer.
  4. Beat in butter or margarine and milk.
  5. Season to taste with salt and pepper.

Yields about 6 servings
