6 medium potatoes, scrubbed and peeled
1 1/2 tablespoons butter or margarine
1/3 cup fat-free milk
salt and pepper to taste
- Peel potatoes.
- Cut potatoes into quarters and cook in boiling water until tender. Drain water from potatoes.
- Mash potatoes with a potato masher or put potatoes in a mixing bowl and beat with an electric mixer.
- Beat in butter or margarine and milk.
- Season to taste with salt and pepper.
Yields about 6 servings
