Carrot Raisin Cookies

Ingredients:

1 cup flour
1 tsp. baking powder
1 cup oats
1 tsp. cinnamon
1 ¼ cups shredded carrots
1 ½ cups raisins
½ cup applesauce
¼ cup vegetable (or canola) oil
½ cup honey

Directions:

  1. Pre-heat oven to 350º F.
  2. In a large bowl, stir together flour, baking powder, oats, cinnamon, carrots and raisins.
  3. In a small bowl, stir together the applesauce, oil and honey.
  4. Mix wet ingredients into dry ingredients.
  5. Drop by teaspoonfuls onto greased cookie sheet. Makes 36 cookies.
  6. Bake for 10 minutes, or until lightly browned. Enjoy!

Yields about 36 servings
